The pork parts traditionally used to make classic soft salame from Muccia are the trimmings of the ham, the bacon and the leanest cuts of pork shoulder, used fresh and ground very finely, so that it results in a mixture of very homogeneous and soft lean and fat. enough to be easily spread on bread.
The salt, pepper, garlic wisely dosed are the condiments that, in addition to characterizing the “decisive and round” taste, ensure a long preservation. Compared to the classic version from Muccia, the aged one goes through a more substantial and long maturation process.
It goes very well with dry red wine.
