Caciofiore dei Sibillini is a soft cheese made from raw milk and vegetable rennet.
For the production of this cheese a thistle flower, Cardunculus Cynara, is used. It is needed for the extraction of the vegetable rennet, which then is put together with the rennet of the sheep born and raised on the pastures of the Sibillini Mountains.
Caciofiore dei Sibillini can be found only from 1000 MASL up. Precisely for this reason its production is very limited.
