The Ancient Romans loved to eat chickpeas fried in olive oil. Today they are the main ingredient of some traditional dishes from south-central Italy and Liguria.
Chickpeas are used as a whole or ground into flour to prepare thin focaccia bread such as Tuscan cecina (chickpea flatbread) and Ligurian farinata (chickpea flatbread).
