How “I am” produced: from raw whole cow’s milk. I am semi-cooked using veal rennet.
How “I look” on the outside: cylindrical shape with a straight and slightly convex rind. Slightly wrinkled rind with a light straw-yellow colour.
How “I look” on the inside: compact ivory white paste with irregularly diffused holes.
How “I smell”: complex aromas of damp earth, hay, fresh hazelnut, boiled chestnut.
How “I taste”: I am, on the whole, sweet with hints of earthy aromas, cut grass, almond. I am compact and dry.
When “I am” born: 60 days
How “I should” be served: thinly sliced or in cubes.
With what “I get on well”: plum jam and orange marmalade, chestnut honey, ripe pink apple.
“My” favourite wine: structured wine, of the average aging period.
