The extra-aged pecorino Selezione cheese is produced exclusively from raw milk, its semi-cooked paste appears compact and straw-yellow in colour.
This cheese allows you to savour everything that the pastures of Altopiano Reatino can offer with its flavours, with its herbs and its fruits. It is cheese with a spicy aftertaste, hints of butter and of something toasted and slightly of animals, the paste is tending to be crumbly. This cheese is the reference point for every lover of real pecorino, for the most demanding palates, able to appreciate the most determined and aromatic flavours.
Ideal with structured wines or grated on a plate of good pasta all’Amatriciana or cacio e pepe.
Minimum aging – 8 months.
