Gessatina – Cacioricotta cheese
from Producer Caseificio Piandelmedico
Semi-ripened cacioricotta type of cheese made from buffalo milk, with pinstriped and flowery rind. Spreadable paste of porcelain white colour, goes well with mustard and dark honey.
Type of milk: buffalo with possible additions of cow’s milk.
Technical characteristics: cacioricotta. Aged, 60 days.
Taste: tending to be savoury, which becomes more intense with the continuation of the aging process.
