Cheese made exclusively from raw milk, its semi-cooked paste appears compact and straw-yellow in colour. The shape is cylindrical and the rind straight. This cheese allows you to savour everything that the pastures of the Altopiano Reatino can offer us with its flavours, with its herbs and its fruits.
Cheese with a sweet aftertaste, tending to be crumbly. Its combination with still wines is ideal.
Matured for a minimum of 80 days up to 12 months.
