How “I am” produced: from raw whole cow’s milk. I am prepared using veal rennet.

How “I look” on the inside: soft ivory white paste with leakage marks and scarce holes.

How “I smell”: of yeast, bread crust, vine leaves and humus.

How “I taste”: I have dark, soft, sweet, buttery paste. I taste slightly herbaceous with hints of walnut husk, and finally of yoghurt.

When “I am” born: 30 days.

How “I should” be served: in slices.

With what “I get on well”: rosehip jam, bitter orange marmalade, chestnut honey, Angelic pear.

“My” favourite wine: young white, unstructured, soft and slightly aromatic.
