Norcidella – Mortadella from Norcia

Re Norcino uses almost the whole shoulder of pork with added fat, all ground and seasoned with salt, pepper, pistachios and natural flavourings. The added fat is cooked and placed in cubes. Mortadella is cooked for up to 24 hours and then cooled but does not undergo a maturation process.
