Pecorino cheese that is produced in Amatrice has origins that have been lost in the mists of time.
It is hard sheep milk cheese. It has a cylindrical shape, with a rind of intense yellow or black if treated with oil and vinegar, while the paste is straw-yellow with tiny holes.
The taste of pecorino amatriciano is intense, not salty but slightly spicy: it is one of the main ingredients together with bacon to make the amatriciana dish.
Aged for 3 to 12 months.
