Pettacci Salumi“The saddle” is the back of the pig: it starts just under the nape and ends almost at the beginning of the legs of the beast. It includes vertebrae and ribs and the whole capocollo muscle from the neck to the rib of the pork shoulder.
It is a very delicate and elegant cut of meat and goes well with tasty and refined dishes.
