The cheek, before being aged, is rolled up. In this way it is easier to cut and use in the kitchen. Compact, pink-coloured slice with an intense and persistent aroma with hints of aromatic herbs, spices and dried fruit.

Minimum aging – 45 days

Average weight – 3,000 / 4,800 kg. Without allergens and gluten.
