Salame Corallina

Salame from Norcia is a salame par excellence.
The mixture is made with lean cuts of pork shoulder, cuttings of loin, ham, with the addition of pork fat cut into cubes. This mixture is then combined with salt, pepper and natural flavourings, as according to the ancient Norcina tradition.
When being cut, the Corallina salame is united and compact.
Excellent with freshly baked bread or with Umbrian Easter savoury cheese cake.
