Salted Rocotta cheese from Norcia

Ricotta Salata di Norcia is strongly linked to the tradition of the Apennines and its seasons. In the past, it was made and stored in salt so that the fresh product could be maintained over time.
In appearance, it has an elongated shape, almost like a pear.
Maturing takes place using wheat bran. The aging varies from 30 to 120 days so ricotta salata taste is quite savoury.
