Small salami from Genga

It is a lean salame made from selected meat of ham and shoulder with the addition of black pepper in grains.
It is stuffed into a fine pork casing and aged for a period of 60 to 120 days.
It is distinguished by its rather slight scent of pepper, has a sweet taste and a soft consistency. Its size is also particular: it is a small salame, suitable to be consumed quickly.
