La Bona UsanzaZolfino bean has returned to the Marche region and more specifically to Serra de ‘Conti thanks to La Bona Usanza.
Small, puffy, pale yellow (like sulphur), formerly widespread in the regions of central Italy, in recent decades it has been brought back to life and cultivated in different areas. Now it’s back in the Marche region, too. The seed, a local ecotype, was found, studied and selected by the CRA – Research Centre for Horticulture in Monsampolo del Tronto.
Zolfino bean has a very fine skin, a creamy consistency, a delicate flavour and an ability to withstand cooking. To savour all its qualities it is advisable to taste it freshly boiled, still warm, with a drizzle of good olive oil and a pinch of salt.
