CHARACTERISTICS: Tintoretto is a mono-cultivar oil obtained from the selection of only native olives of Castiglionese variety from old plants present only in the Valley of the River Fino, in the province of Teramo. In Italy there are more than 500 olive varieties. This unique biodiversity in the world gives mono-varietal oils a strong sensorial and territorial identity. The “Castiglionese” olive tree has a limited distribution and is present above all in the municipality of Castiglione Messer Raimondo from which the cultivar takes its name. It is a plant of particular beauty and good vigour but low yield in oil.

HARVESTING PERIOD: the first 10 days of October

MILLING AND EXTRACTION PROCESS: continuous milling cycle, cold extraction

VARIETY SELECTION: 100% Castiglionese

SENSORY EVALUATION: Lightly fruity with notes of almond and spices, delicate hints of persistent bitter and spicy, aftertaste of aromatic herbs such as sage.

IDEAL FOR: seafood salads and compotes, steamed fish, cold appetizers, steamed foods, delicate soups
