A short pasta similar to caserecce or strozzapreti made from wild pea and chickpea flour, like the pìppoli pasta, this is made with the same proportions for the flour mix.

Cooking time: 12-13 minutes. Rich in protein and fibre, it can be eaten the same as pasta, combined with vegetables or other sauces, it goes well with legumes. Triccole, green cabbage and rosemary; or Triccole, lard (bacon fat), aromatic herbs and black Cyprus salt; or Triccole, late-growing radicchio and walnuts are some recipe ideas. We do not recommend exceeding 50g per portion.
